Refinement : After a few months of aging in stainless steel tanks, drafting is carried out to start the secondary fermentation in the bottle. The bottles remain for a period in our cellars and are then disgorged and dosed, sealed with a cork and cage before further aging in the cellar.
Vinification : The hand-picked grapes are crushed-stemmed and sent to the press where they are cooled to a temperature below 5°C so that the fermentation process does not begin, then left to cold macerate so that the skins in contact with the must release the desired amount of color. Following this process, the pressing will take place.
