Vinification : The grapes are harvested by hand and placed in special boxes and immediately transported to the winery where are pressed in a special membrane press that with his slow and soft movement releases the juice obtained, afterwards it will be placed in steel tanks at around 4 ° C and it will remain to decant and left in contact with the solid particles of the must so the wine can take benefit from all the primary aromas. The wine obtained, the spring following of the harvest, is bottled for the natural fermentation and kept on the lees for a period of at least 50 months for having a really high quality product.
